So, with Stacey and Joe on vacation this week, I’m stepping in to share one of my favorite smoothie recipes. I’m a HUGE fan of smoothies because:

1. Unlike “juicing,” smoothies include whole foods that are emulsified together without extracting the pulp etc., so the fiber and vitamins remain in the drink. It’s like drinking a salad, but tastier.

2. Smoothies are an ideal way to get nutritionally abundant, calorie-efficient foods into your daily diet. People who don’t particularly enjoy the taste of veggies can blend them with fruit in a way that’s delicious.

3. They taste great and travel well if you’re in a hurry.

My “Smoothie Rules” require at least a 50/50 ratio of veggies to fruit, and I almost always include a dark green leafy vegetable (kale, spinach, chard) or cruciferous (broccoli) to optimize nutritional content.

Now, you’re going to read the ingredients and have a hard time believing that it tastes good. It does. It’s not a milkshake, but I think it’s pretty darn good. Just try it!

I prefer to mix this one up in my Ninja blender.

Ingredients

32 oz. Organic Vanilla Almond Milk

2 Cups Organic Spinach

1 Cup Organic Broccoli

2 Cups Organic Frozen Blueberries

1 Organic Banana

1 Scoop of Plant-Based Protein Powder (I prefer Garden of Life, unflavored)

1 Teaspoon of Cinnamon

Makes several servings which I store in my fridge and drink over the course of a few days. Try it, you’ll like it!
