Recipe of the Week: Mexican Caesar Salad

Summer is almost here.  Are you bathing suit ready?  The shred may be over but that’s no excuse to fall off the diet wagon.  Here’s an awesome salad to bring to your next BBQ.

Mexican Caeser Salad

Serves 4

Crisp, bright and refreshing, this salad satisfies with creamy avocados and goat cheese, roasted pumpkin seeds, mild black olives and tangy lime juice.


1/2 cup Whole Foods Market Goat Cheese Crumbles 
1/3 cup roasted, salted pumpkin seeds (pepitas) 
1/4 cup chopped fresh cilantro (optional) 
3 tablespoons lime juice 
2 cups bite-size-crumbled 365 Everyday Value Organic Blue Corn Tortilla Chips 
1 large avocado, diced 
1 head romaine lettuce, chopped 
1/2 cup sliced 365 Everyday Value Jumbo Pitted Black Olives


Combine all ingredients in a large bowl and serve.


Per serving: 340 calories (210 from fat), 23g total fat, 6g saturated fat, 10mg cholesterol, 420mg sodium, 28g total carbohydrate (8g dietary fiber, 2g sugar), 11g protein
