Slow Cooker Turkey Soup Recipe:

Ingredients:

2 lb. cooked Turkey Meat, cut into bite-sized pieces (white + dark ok),

32 oz. Low Sodium Turkey or Chicken Broth

4 Carrots, cut into ½” rounds

1 Yellow Onion, cut into thin wedges

1 1/2 Tbsp. Minced Garlic

1 Red Bell Pepper (Capsicum), seeded, cut into 1” pieces

1 Green Bell Pepper (Capsicum), seeded, cut into 1” pieces

1 cup Dries Cranberries

*see Mashed Sweetato Recipe (left-over Mashed Sweet Potatoes are great instead!)

Directions:

Step 1: Place first five ingredients (thru garlic), into a slow cooker; stir to combine. Cover and cook for 3 hours on HIGH or 6 hours on LOW.

Step 2: If cooking on low, turn to high. Stir in peppers and cranberries. Cover and cook 45 minutes more, until peppers are tender. Make Mashed Sweetato recipe, if necessary.

Step 3: When both recipes are complete, top your portion soup with your portion mashed sweetatos. Sprinkle with freshly cracked black pepper if desired.

Full Meal Portions: (Makes sense if you speak Balanced Habits lingo!)

2 Unit Portion: 1 heaping cup of soup + 1/3 cup Mashed Sweetatoes

3 Unit Portion: 1 1/2 heaping cup of soup + 1/2 cup Mashed Sweetatoes

4 Unit Portion: 2 cups of soup + 2/3 cup Mashed Sweetatoes

5 Unit Portion: 2 heaping cups of soup + 3/4 cup Mashed Sweetatoes

Mashed Sweetato Recipe:

Ingredients:

1 lb. Sweet Potatoes or Yams, roughly peeled and cut into 2” pieces.

2 Tbsp. Unsalted Butter

1/8 cup Low Fat Milk or Half & Half

1/2 tsp. Kosher Salt

1/4 tsp. White Pepper

Directions:

Add cut sweet potatoes to a large non-Teflon pot (scratch resistant).

Add enough water to cover by 1”.

Bring to a boil; reduce heat to medium, cover with lid and cook for about 15 minutes or until tender.

Drain water and return cooked sweet potatoes to pot. Add remaining ingredients and mash according to desired consistency.
