When you begin to view food as fuel for your body, you’ll only want to load it with healthful foods that keep you energized all day. Now, I’m not saying that Joe’s killer Workout of the Week will be a breeze after eating this salad…but you’ll definitely get through the 5 minutes of Burpees or your personal training session a whole lot easier!
Chickpea, Avocado + Kale Salad
Ingredients
– Kale, chopped
– Chickpeas
– Avocado
– Fresh basil, chopped
– Red onion, minced
– Garlic, minced
– Sprinkle of: salt, pepper + red pepper flakes
– Drizzle of: extra virgin olive oil, honey and lemon juice
Directions
Mix it all together, let it hang in the fridge for a bit to let all the flavors “melt” together.
