Comfort food. Real food. That’s what we crave. We spend our days sweating with our personal trainer, doing a group training class, running, doing yoga, and we want to eat REAL FOOD! There’s a public perception that, in order for weight loss to occur, you have to eat cabbage and water and nothing else. Not true. If you learn the principles of balanced meals and portion control like we teach in TakeDown Challenge and TakeDown LifeStyle, you can eat Beef Stroganoff and other delicious comfort foods. Come on, live a little…and lose weight while doing it!

Beef Stroganoff

Ingredients:

1.5 lbs. boneless Sirloin Steak, trimmed of all fat
Canola Oil Cooking Spray
3 cups sliced Brown Mushrooms (about 12 oz.)

1/2 cup Yellow Onion, diced small 2 Tbsp. Unsalted Butter
3 Tbsp. Whole Wheat White Flour 1 1⁄2 cup Unsalted Beef Cooking Stock

1/4 cup Braggs Liquid Amino’s finger pinch Ground Black Pepper 1/3 cup Light Sour Cream
1/2 cup Non-Fat Plain Yogurt
4 cups No Yolks Noodles
(whole 8 oz. bag), prepared
3 Tbsp. Fresh Flat-Leaf (Italian) Parsley, chopped fine

Directions:
Step 1: Cut beef diagonally across the grain into 1/4” wide strips; cut the strips into 2” pieces. Place beef strips, sliced mushrooms and chopped onion near your stove top in a medium bowl, with a lid. Boil your noodles in a big pot of water as directed on the package.
Step 2: Heat a large non-stick skillet over med-high heat. Coat with Canola cooking spray. Add beef strips; sauté 2 minutes or until still slightly pink. Remove beef from pan; place in the bowl. Place a paper towel over, not a lid.
Add mushrooms and onion to the same pan; sauté 4 minutes.
Add to the beef in bowl; keep covered with paper towel only.
Step 3: Melt butter in the same pan now over medium heat. Add flour. Cook 1 minute, stirring with a whisk. Gradually add the beef stock; stirring constantly. Cook
1 minute or until thickened and bubbly.

Step 4: Add the beef mixture, Liquid Aminos and pepper to the pan; bring to a boil. Reduce heat and simmer 4 minutes. Remove from heat; let stand 30 seconds. Stir in the sour cream and yogurt.

Step 5: Combine the cooked noodles and the minced parsley in a bowl.

Notes:

Portion out your noodle amount. Portion out your beef mixture and place on-top of your noodles. Enjoy!

Yields: ten 2 unit servings
(1/2 cup beef mixture + heaping 1/3 cup noodles)

Yields: eight 3 unit servings (2/3 cup beef mixture + 1/2 cup noodles)

Yields: six 4 unit servings
(1 cup beef mixture + heaping 2/3 cup noodles)

Yields: four 5 unit servings
(1 1/4 cup beef mixture + 1 cup noodles)
